Can’t make mayo emulsify – pace of blender? : AskCulinary

I’m trying to make simple mayo. Recipe is one whole egg room temp, 1 tbsp Dijon mustard, 1 tbsp red wine vinegar, ¼ tsp salt. I mix that, then super slowly one drop at a time add 1 cup grape seed oil.

It never whips up. I swear I’m adding the oil like a drip at a time suuuper slowly.

My conclusion is the blender must be too fast or too slow. What speed should it be on? Or am I doing something else wrong? I want to make remoulade and such.

Any help appreciated experts!
