I have an electric range (the kind with coils/glasstop, not induction) and frequently when I try to follow a recipe’s temp instructions i end up burning things.

When I got to the potatoes I had to turn down the heat to a 6 (just above medium) and it still burned the potatoes. An actual, numerical medium-high (7.5 out of 10) will instantly fill my kitchen with smoke.
Do I need to recalibrate my range somehow, or is this normal and I just need to adjust my temps way down from recipes?
