Freezing tofu previous to cooking? : AskCulinary


I go to a sushi restaurant sometimes and the tofu is so good! They have these holes in the tofu and the flavor is amazing. I’ve heard that some places freeze the tofu in order to achieve this, but that is pretty vague. I’m wondering if anybody has had experience preparing tofu in this way and if so what steps do you take.
