For Pljeskavica or “Balkan burgers” a typical recipe is 3 pounds of ground meat (some combo of beef, pork, lamb), seasoning, onion, and 1/4 cup SPARKLING WATER. The patties are then grilled (or broiled or pan fried).
(Side note: these things are delicious and everyone should make them this summer)
My question, though, is WHY the sparkling water? Why water at all? And why sparkling water? What benefit is that providing? How could that small of an amount of carbonation actually do anything when mixed in with that much meat?!
