Is it harmful to let uncooked meat sit in a tomato sauce for 1-2 days earlier than cooking? : AskCulinary


I’m thinking about making a tomato sauce out of canned raw whole tomatoes. Usually I puree the tomatoes, add spices and let it sit in the fridge for a day or two to let the flavors get to know each other. Is it dangerous to add meat too?

(I plan on simmering after to reduce by half.)
