Most recipes online call for cornstarch/potato starch as a dusting.
However, Mochi is really close to a Filipino desert called Espasol, which uses toasted flour as dusting. Can I use Toasted Glutinous Rice Flour/Toasted Starch as dusting? I don’t plan on putting fillings, so I might as well make the dusting a bit more flavourful.
I also have some dessicated coconut. Can I also use it to cover my mochi? Thanks!
