Recently, all omelettes I make have a tendency to be really thin around the edges and they develop a shiny layer around the edges which tastes like plastic and has a consistency similar to plastic as well.

The shiny bits aren’t oil (I use less than a teaspoon of oil to make the omelette and spread it around the pan with a tissue).
How do I get rid of this?
