What are flawed with my cookies? : AskCulinary

I wasn’t able to get white sugar and the flour ended up being too little and do I had to add a bit more. I followed the serious eats recipe well except for maybe the flour, white sugar and baking soda.

Can anyone tell why the cookies turn out this way? What ingredient do I need to adjust?
