Why does Greek yogurt begin turning into watery solely after you open it? Is there any technique to forestall it? : AskCulinary


The containers of Greek yogurt I buy from the store are always pretty thick when I first open them, but by the next day it separates and gets watery.

Does anyone know why this occurs specifically after opening the container? Something to do with air exposure, maybe? I’m also curious whether there’s a way to prevent separation after opening, although I suspect there isn’t.
